| A great example of a young champenois vigneron following a non interventionist wine making philosophy. Long barrel fermentation with indigenous yeast, un-fined and unfiltered, this champagne is a perfect example of the expression of Chardonnay in Champagne. It has citrus and green apple notes with an elegant minerality and brioche complexity. Well balanced acidity and lingering on the mouth. |

I've selected a wine that perfectly fits into the natural ethos - minimal intervention on the part of the winemaker, very low levels of added sulphur, and a commitment to organic viticulture; in short, the type of wine that you don't often see in the 21st century. Black fruits, garrigue spice and minerals on the nose, leading to a palate of dark cherry and mulberry, with a hint of meatiness and a touch of iron, mineral character. Serve with red meats, stews and cheeses. |

| Gassac Rouge is a big wine made from predominately Cabernet Sauvignon that takes time to come round, but it will reward the keeper when it does. |

An unusual blend of Sangiovese, Merlot, Petit Verdot and Shiraz, sculpted to emulate the Rhone style. This wine is much more individual than a typical template, offering softer tannins, ripeness and sweet berries. The spice follows nicely with some earthy characters and a long dry finish. Enjoy with food, especially lamb. |
